Sugar Plus is a high-quality isomalt product for professional use in patisserie. It is especially suited to making rigid, abstract and modern decorations for cakes, desserts and showpieces. Thanks to its excellent transparency and stability, Sugar Plus is the ideal choice for demanding sugar work.
The product is easy to work with and can be melted on the hob or in the microwave. Once dissolved, it forms a clear, transparent syrup that can be shaped in many ways after a short rest. Sugar Plus has a low tendency to crystallise and a high resistance to moisture, which is a real advantage for elaborate decorations.
Depending on the technique, Sugar Plus allows different creative uses: cast decorations in moulds, pulled sugar for delicate, transparent elements, and blown sugar for hollow, sculptural structures with impressive depth.
This makes Sugar Plus an essential product for confectioners and pâtissiers who value precision, aesthetics and professional results.
Once fully dissolved, the mass reaches the consistency of a transparent syrup. Then leave it to rest for a few minutes, as the mass thickens further as it cools. It can then be used with suitable techniques to make various decorations:
- Directions for use
- Sugar Plus is the trade name for isomalt, a sugar used for special hard decorations. Dissolve it in a pan on a gas hob or in the microwave without stirring too much, to avoid air bubbles forming.
- Direct pouring
- Pour into moulds or other structures to create original, transparent decorations.
- Pulled sugar
- If the mass is worked at approx. 40 °C and kept warm with a heat lamp, it can be used like sugar paste to create attractive transparent or translucent shapes.
- Blown sugar
- The mass can be worked much like glass to create hollow structures and striking sculptural effects.
